Ingredients
Vegetables
- 8-10 Yardlong Bean chopped into 2-3 cm lengths
- 1 Potato peeled and thinly sliced
- 6 Okra
- 1 small Bottle Gourd thinly sliced into rounds
- 1 handful Spinach
Instructions
- Prepare the vegetables. Chop the yardlong beans, thinly slice the potato and bottle gourd, and slit the green chilies. Slice the ginger and garlic.
- In a large pot, heat 3-4 cups of water. Adjust the amount of water depending on how much stew you want to make. Add the yardlong beans, potato, okra, bottle gourd, ginger, garlic, green chilies, and bamboo shoot juice to the pot. Season with salt.
- Bring the water to a boil, then reduce heat and simmer for 10-12 minutes, or until the vegetables are tender. Adding the harder vegetables first ensures they cook through evenly.
- Add the spinach to the pot and cook for another 2-3 minutes, or until wilted. Spinach cooks quickly, so it's added last to retain its vibrant green color and nutrients.
