Ingredients
For the Wild Yeast Water (Prepare 3-4 days in advance)
For the Multigrain Bread Bowls
- 125 gm Multigrain Flour
- 75 gm Multigrain Flour
- 6 tbsp Yeast active, dry, if not using wild yeast water
- 1 tsp Salt
- 1 tbsp Olive Oil
- 5 Muffin Cups paper or silicone
- 1 tbsp Herbs dried, or a blend, rosemary, thyme
For the Millet & Root Vegetable Stew
Instructions
Prepare Wild Yeast Water
- Place grapes, sugar, and water in a jar. Shake, and let sit in a warm place (70-75°F) for 3-4 days, shaking daily. The mixture should be bubbly and have a pleasant fruity aroma.
Make the Bread Dough
- Combine 125g flour and 70ml of sieved wild yeast water (or 70ml of warm water with 6 tbsp active dry yeast dissolved in it). Mix to a shaggy dough, cover, and let rise for 4 hours in a warm place.
- Add remaining 75g flour, 25ml wild yeast water (or 25ml of warm water), and salt to the sponge. Mix until combined.
- Turn out onto a lightly floured surface, add 1 tbsp olive oil, and knead until smooth and elastic (12-15 minutes).
- Place in a greased bowl, cover, and let rise until doubled (1-1.5 hours).
- Punch down the dough, turn it out, and divide into 5 equal pieces. Cover and let rest for 15 minutes.
- Lightly grease muffin cups and place them upside down in a baking tray.
- Shape each dough piece into a 3.5-inch disc and press it into each muffin cup.
- Cover with greased plastic wrap and let rise for 30 minutes in a warm place.
- Preheat oven to 350°F (180°C).
- Brush the dough with olive oil and sprinkle with dried herbs.
- Bake for 15-18 minutes, until golden brown.
- Remove from cups and cool on a wire rack.
Make the Millet & Root Vegetable Stew
- Heat 1 tbsp olive oil in a saucepan. Add all vegetables, millet, fresh herbs, salt, and pepper. Pour in vegetable stock.
- Cover and cook for 20-25 minutes, or until millet is tender. Fluff with a fork before serving.
- Serve the warm stew in the baked bread bowls.
