Instructions

  • Soak the mixed dals in cold water for 20 minutes. This helps them cook evenly and improves their texture.

  • Drain the soaked dals and add them to a pressure cooker. Add the bay leaves, green chilies, and 3 cups of water. Pressure cook on medium heat for 3 whistles, or until the dals are soft and mushy.
  • While the dal is cooking, prepare the tempering. Heat the ghee in a pan over medium heat. Add the cumin seeds and dried red chilies. Sauté for a few seconds until the cumin seeds are fragrant and the chilies darken slightly.

  • Add the chopped onion to the pan and sauté until translucent. This builds a flavor base for the dal.
  • Add the chopped ginger and garlic to the pan. Sauté for about a minute until fragrant, being careful not to burn them.
  • Stir in the spinach and tamarind paste. Cook for 2-3 minutes, or until the spinach wilts and the tamarind paste is well incorporated.

Recipe Notes

Good To Know

  • Serve this spinach dal with steamed rice and roti.
  • For a deeper flavor, temper the cooked dal with a mix of whole spices like cumin seeds, mustard seeds, and a pinch of asafoetida in hot ghee or oil right before serving.
  • If you prefer a smoother texture, blend half of the cooked dal mixture before adding the spinach paste, then combine both portions for a creamy yet textured result.
  • To enhance the tangy notes, add a splash of tamarind pulp or a squeeze of fresh lemon juice at the end of cooking, adjusting the quantity to balance the spinach’s earthiness.

Expert Tips

  • For a richer flavor, consider using coconut milk instead of water when cooking the dal.
  • Freshly grated ginger added along with the spinach will brighten the flavors of the dish.
  • Adjust the amount of spinach to your liking. Less spinach will result in a milder flavor, while more will create a vibrant green and earthy dal.

Storage Instructions

  • Refrigerate leftovers in an airtight container. The flavors will deepen overnight.
  • Reheat with a splash of water to restore the original consistency.
