Ingredients
Beetroot
- 350 gm Beetroot
Dough
- 500 gm Bread Flour
- 10 tsp Salt or to taste
- 7 gm Yeast instant
- 30 ml Olive Oil
Instructions
- Preheat oven to 150°C (300°F). Bake the beetroots for 2 hours, or until tender. This slow roasting brings out the natural sweetness of the beets.
- Once the beetroots are cool enough to handle, peel and puree them. A food processor or blender works well for this.
- In a large bowl or the bowl of a stand mixer, combine the bread flour, salt, instant yeast, olive oil, and beetroot puree. Mix on medium speed until a smooth and soft dough forms. This may take several minutes.
- Lightly grease a large bowl with olive oil. Transfer the dough to the greased bowl, cover with plastic wrap, and let it rise in a warm place for 1.5-2 hours, or until doubled in size.
- Punch down the risen dough to release the air. Divide the dough into 5 equal portions. Roll each portion into a triangular shape.
- Using a bench scraper or a sharp knife, make several slits in each triangle to mimic the veins of a leaf. Be careful not to cut all the way through the dough.
- Transfer the shaped dough to a baking sheet lined with parchment paper. Gently stretch the dough to open the slits, creating the characteristic fougasse shape.
- Loosely cover the baking sheet with plastic wrap and let the dough proof for another 30 minutes. This allows the dough to relax and rise slightly before baking.
- Preheat oven to 200°C (400°F). Brush the loaves with olive oil and sprinkle with sea salt. Bake for 12-14 minutes, or until golden brown and cooked through.
Recipe Notes
Good To Know
- For an added depth of flavor, try roasting the beetroot with a few sprigs of thyme or rosemary before incorporating it into the dough. The infused herbs will complement the earthiness of the beets and add a subtle aromatic note to the bread.
- After shaping and scoring your fougasse, brush the surface with a little extra olive oil and sprinkle with flaky sea salt or herbes de Provence for a crispier, more flavorful crust.
- If you want to make your fougasse even more visually striking, reserve a handful of finely grated raw beetroot to sprinkle on top just before baking—this intensifies the color contrast and adds a delicate crunch.
- Leftover fougasse can be sliced and toasted, then topped with goat cheese, walnuts, and a drizzle of honey for a quick and elegant breakfast or appetizer.
Expert Tips
- Don't overwork the dough, as this can lead to a tough texture. Knead just until smooth and elastic.
- Beetroot can vary in moisture content. Adjust the amount of flour in the recipe as needed to achieve a soft, slightly sticky dough.
- For a deeper beetroot flavor, use roasted beet puree instead of grated raw beetroot in the dough.
Storage Instructions
- Store leftover fougasse in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
