Ingredients
For the Marinade
- 1 cup Yogurt greek yogurt or thick hung yogurt recommended
- 2 tbsp Gram Flour also known as besan
- 2 tbsp Ginger freshly grated
- 2 tbsp Garlic freshly grated
- 2 tbsp Lemon Juice freshly squeezed
- 1 tbsp Garam Masala adjust to taste
- 1 tsp Paprika kashmiri red chili powder for color; use less for less spice
- 3/4 tsp Salt adjust to taste
- 1/2 tsp Cayenne Pepper for extra heat, optional
For the Skewers
- 20 Button Mushrooms washed and cleaned
- 1 medium Onion cut into large chunks
- 1 medium Bell Peppers cut into large chunks, green
- 10 Cherry Tomatoes cut into large pieces, or use 2 medium tomatoes
- 8-10 Bamboo Skewers soak in water for at least 2 hours before using
- 2 tbsp Vegetable Oil for brushing the skewers
Instructions
Prepare the Marinade
- Combine yogurt, gram flour, ginger, garlic, lemon juice, garam masala, paprika, salt, and cayenne pepper (if using) in a bowl. Whisk until well combined.
Marinate the Vegetables
- Add the mushrooms, onion, bell pepper, and cherry tomatoes to the marinade. Gently toss to coat all the vegetables evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight.
Prepare the Skewers
- Remove the marinated vegetables from the refrigerator and let them sit at room temperature for 10-15 minutes. Thread the vegetables onto the soaked bamboo skewers, alternating between mushrooms, bell peppers, onions, and cherry tomatoes.
Grill the Skewers
- Preheat your grill to high heat. Lightly brush the grill grates with oil. Place the skewers on the preheated grill.
Cook the Skewers
- For even cooking, cover the skewers loosely with aluminum foil for the first 8 minutes. This helps the marinade cook thoroughly and prevents burning. After 8 minutes, remove the foil and continue grilling for another 3-4 minutes per side, or until the vegetables are tender and slightly charred. Keep an eye on them to avoid burning.
