Ingredients
For the Grape Chutney
- 1 cup Grapes black, seeded and chopped
- 1 tbsp Vegetable Oil vegetable or canola
- 1/2 tsp Salt
- 1/4 tsp Chili Powder red
- 1/4 tsp Salt black, kala namak, optional
For the Paneer Marinade
- 400 grams Cottage Cheese indian cottage cheese
- 2 tbsp Gram Flour besan
- 1.5 tsp Salt or to taste
- 1/2 tsp Pepper Powder white
- 1 tsp Mango Powder amchur, dry
- 1 pinch Saffron kesar, optional
- 2 tbsp Milk
- 1 cup Heavy Cream fresh
- 1 tbsp Lemon Juice freshly squeezed
For Assembly
- 2 tbsp Chaat Masala
- 1 inch Bell Peppers red, seeded and cut into chunks
- 1 tbsp Vegetable Oil for cooking
- 8 Wooden Or Metal Skewers soaked in water for 30 minutes if using wooden skewers
Instructions
Prepare the Grape Chutney
- Heat oil in a pan. Add chopped black grapes, salt, red chili powder, and black salt (if using). Sauté until grapes are soft and slightly caramelized. Set aside.
Marinate the Paneer
- Cut paneer into 1-inch cubes. In a bowl, combine gram flour, salt, white pepper, amchur, and saffron strands dissolved in milk. Add heavy cream and lemon juice; mix well.
- Add the paneer cubes to the marinade, ensuring they are evenly coated. Let it marinate for at least 30 minutes (longer is better).
Assemble the Skewers
- Thread paneer cubes, red bell pepper chunks onto skewers, alternating between them.
Cook the Tikka
- Heat oil in a pan or preheat oven to 400°F (200°C). Brush the skewers with some of the leftover marinade. Cook on medium heat until golden brown, turning occasionally, or bake in the preheated oven for 15-20 minutes, flipping halfway through.
Serve
- Serve the Angoori Paneer Tikka immediately, drizzled with the grape chutney.
