Ingredients
 

Mushrooms & Aromatics

  • 200 gm Mushrooms cremini or button mushrooms recommended; clean thoroughly.
  • 1 medium Onion finely chopped, or use 1/2 cup of pre-made onion paste
  • 2 tsp Ginger Paste
  • 2 tsp Garlic Paste

Spices & Dairy

Other Ingredients

  • 2-3 Chilies sliced; adjust quantity based on spice preference, green
  • 1.5 tsp Salt or to taste
  • 2 tbsp Cooking Oil vegetable oil or ghee
  • 1/2 cup Water as needed for adjustment of consistency

Preparation

  • Wash mushrooms thoroughly and set aside.

Sauté Aromatics

  • Heat oil in a pan. Add chopped onions and sauté until softened. Add ginger and garlic paste and sauté until fragrant and lightly browned.

Add Spices and Yogurt

  • Stir in cumin seeds, coriander powder, red chili powder, curry powder, cinnamon powder, nutmeg powder, and tomato paste. Cook for 1-2 minutes until fragrant. Add yogurt and stir well to combine.

Incorporate Mushrooms

  • Add the mushrooms, green chilies, and salt. Stir well and add 1/2 cup of water. Cover the pan and simmer for 5-7 minutes, or until the mushrooms are tender.

Finishing Touches

  • Stir in the dried fenugreek leaves. Check seasoning and adjust salt as needed. If the consistency is too thick, add more water. Serve hot.
