Ingredients
Mushrooms & Aromatics
- 200 gm Mushrooms cremini or button mushrooms recommended; clean thoroughly.
- 1 medium Onion finely chopped, or use 1/2 cup of pre-made onion paste
- 2 tsp Ginger Paste
- 2 tsp Garlic Paste
Spices & Dairy
- 1 tsp Cumin Seeds jeera
- 2 tsp Coriander Powder dhania
- 1 tsp Chili Powder adjust to your spice preference, red
- 1/2 tsp Cinnamon Powder
- 1/4 tsp Nutmeg Powder
- 1 tsp Curry Powder
- 1 tsp Fenugreek Leaves dried
- 1/2 cup Yogurt curd, plain yogurt is best
- 2 tbsp Tomato Paste
Other Ingredients
- 2-3 Chilies sliced; adjust quantity based on spice preference, green
- 1.5 tsp Salt or to taste
- 2 tbsp Cooking Oil vegetable oil or ghee
- 1/2 cup Water as needed for adjustment of consistency
Instructions
Preparation
- Wash mushrooms thoroughly and set aside.
Sauté Aromatics
- Heat oil in a pan. Add chopped onions and sauté until softened. Add ginger and garlic paste and sauté until fragrant and lightly browned.
Add Spices and Yogurt
- Stir in cumin seeds, coriander powder, red chili powder, curry powder, cinnamon powder, nutmeg powder, and tomato paste. Cook for 1-2 minutes until fragrant. Add yogurt and stir well to combine.
Incorporate Mushrooms
- Add the mushrooms, green chilies, and salt. Stir well and add 1/2 cup of water. Cover the pan and simmer for 5-7 minutes, or until the mushrooms are tender.
Finishing Touches
- Stir in the dried fenugreek leaves. Check seasoning and adjust salt as needed. If the consistency is too thick, add more water. Serve hot.
