Preparing the Idlis

  • This recipe is a great way to use leftover idlis. Crumble or cut them into small, bite-sized pieces.

Making the Upma

  • Heat oil in a pan on medium heat. Add mustard seeds and urad dal, and let them splutter and turn golden. Add curry leaves and green chilli if using.
  • Add onion if using and saute until soft. Add turmeric powder and mix.

Finishing

  • Add the crumbled idlis and salt, and toss gently on low heat for 2 to 3 minutes until warmed through and lightly coated in the tempering. Turn off heat and mix in lemon juice and coriander leaves if using.

Packing

  • Let cool slightly and pack in the tiffin box with fruit on the side.

Tiffin Pairing

A piece of fruit is enough to round out this already complete and filling tiffin.

Make-Ahead Tip

This recipe is designed specifically to use up leftover idlis from a previous meal, making it one of the quickest recipes in the entire plan.

Quick Swap

Leave out the onion for a simpler version. A few crushed peanuts add extra crunch if nut allergies aren't a concern.

Allergen Note

Idlis are rice and lentil based and generally gluten-free, but check if any packaged ingredients were used in making the original idlis.

Spice Note

Green chilli is optional. Leave it out for a very mild version.

Packing Tip

Keep this recipe in mind whenever you have 3 or 4 leftover idlis sitting in the fridge - it is one of the best ways in this plan to avoid food waste.
