Ingredients
For the Idli Upma
- 3 Idli Leftover, Crumbled or cut into small pieces
- 1 tbsp Onion Finely chopped, optional - see Quick Swap
- 1/4 teaspoon Mustard Seeds
- 1/4 teaspoon Urad Dal Optional
- 4 Curry Leaves Optional
- 1 Green Chilli Finely chopped, optional - see Spice Note
- 1 pinch Turmeric Powder Optional
- 1 pinch Salt Only if needed, idlis are usually already salted
- 1 teaspoon Oil
- 1/2 teaspoon Lemon Juice Optional
- 1 teaspoon Coriander Leaves Chopped, for garnish
For Serving
- 1 Banana Or any seasonal fruit
Instructions
Preparing the Idlis
- This recipe is a great way to use leftover idlis. Crumble or cut them into small, bite-sized pieces.
Making the Upma
- Heat oil in a pan on medium heat. Add mustard seeds and urad dal, and let them splutter and turn golden. Add curry leaves and green chilli if using.
- Add onion if using and saute until soft. Add turmeric powder and mix.
Finishing
- Add the crumbled idlis and salt, and toss gently on low heat for 2 to 3 minutes until warmed through and lightly coated in the tempering. Turn off heat and mix in lemon juice and coriander leaves if using.
Packing
- Let cool slightly and pack in the tiffin box with fruit on the side.
