About Vegetable Sevai for Kids Tiffin

Thin vermicelli tossed with carrot and peas in a light tempering - similar in spirit to poha and upma, but with its own soft, delicate texture that many kids enjoy.

Preparing the Vermicelli

  • If using unroasted vermicelli, dry roast it in a pan on low heat for 2 to 3 minutes until light golden. Skip this step if using pre-roasted vermicelli. Set aside.

Making the Sevai

  • Heat oil in a pan on medium heat. Add mustard seeds and urad dal, and let them splutter and turn golden. Add curry leaves and green chilli if using.
  • Add onion if using and saute until soft. Add carrot and peas, and cook for 2 minutes.
  • Add water and salt, and bring to a boil.

Finishing

  • Add the roasted vermicelli, stir gently, and cook on low heat for 3 to 4 minutes, stirring occasionally, until soft and the water is absorbed. Turn off heat and mix in lemon juice and coriander leaves if using.

Packing

  • Let the sevai cool slightly and pack it in the tiffin box with banana and cucumber slices on the side.

Banana and cucumber add sweetness and crunch alongside the soft vermicelli.

Make-Ahead Tip

Chop the vegetables the night before to save time on a busy morning.

Quick Swap

Leave out the onion for a simpler version. Finely chopped beans or corn work well instead of peas.

Allergen Note

Most vermicelli is wheat-based and contains gluten - check the label if you need a gluten-free option, as rice vermicelli is also available.

Spice Note

Green chilli is optional here. Leave it out for a very mild version.

Packing Tip

A few extra drops of water while cooking keeps the vermicelli from drying out and clumping together by lunchtime.
