- 1/2 cup Peanut Flour use a high-quality brand. sukrin peanut flour is recommended.
- 1/4 cup Coconut Flour
- 1/4 cup Cocoa Powder unsweetened
- 1/2 tsp Baking Powder
- 1 tsp Salt
Wet Ingredients
- 1/2 cup Coconut Sugar
- 1/3 cup Vegetable Oil neutral flavored oil like avocado or canola is recommended.
- 1/2 cup Coconut Milk thick
- 1 Chia Egg 1 tablespoon chia seeds mixed with 3 tablespoons water, let sit 5-10 minutes.
- 1 tsp Vanilla Extract
Mix-ins
- 1/4 cup Roasted, Peanuts crushed
- 1/4 cup Chocolate Chunks Or Chips dark chocolate, milk chocolate, or a combination are great choices.
Instructions
Prepare the Chia Egg
- Mix 1 tablespoon of chia seeds with 3 tablespoons of water in a small bowl. Let it sit for 5-10 minutes to thicken.
Combine Dry Ingredients
- In a medium bowl, whisk together the peanut flour, coconut flour, cocoa powder, baking powder, and salt.
Combine Wet Ingredients
- In a separate bowl, whisk together the coconut sugar, coconut milk, chia egg, vanilla extract, and oil until well combined.
Combine Wet and Dry
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
