Instructions

Prepare the Batter

  • In a large bowl, combine rice flour and sugar. Gradually whisk in milk and water until a smooth batter forms, ensuring no lumps remain. Let the batter rest for at least 4 hours, or preferably overnight, to ferment.

Blend the Batter

  • After resting, transfer the batter to a blender and blend for 25-30 minutes until completely smooth and slightly stringy. The consistency should be medium; neither too thick nor too thin. Adjust with a little more water if needed.

Fry the Utanki

  • Heat vegetable oil in a deep pan or wok over medium heat. Once hot, carefully scoop a small amount of batter (about 2 tablespoons) into the hot oil using your hand, swirling it in a circular motion to create a thin crepe. Repeat for each crepe.

Cook and Drain

  • Fry the Utanki until they turn golden brown. Remove them from the oil and place them on a paper towel-lined plate to drain excess oil.

Shape and Cool

  • Immediately after frying, use a rolling pin to gently roll each crepe into a cylindrical shape while it’s still warm. This helps the Utanki retain its shape as it cools.

Store and Serve

  • Once the Utanki have completely cooled, store them in an airtight container at room temperature for up to 2 weeks. Serve them as a snack or dessert.

Recipe Notes

Expert Tips for Perfect Utanki

  • For a sweeter Utanki, increase the sugar to 1 1/4 cups.
  • If the batter is too thick, add a little more water, a tablespoon at a time, until you achieve the desired consistency.
  • Don't overcrowd the pan when frying the crepes; fry them in batches to ensure even cooking and browning.
  • Experiment with different types of oil for frying, such as coconut oil, for a unique flavor profile.
