  • Thoroughly wash and peel the ginger. Cut into small pieces.
  • Soak the tamarind in 50 ml of boiling water. Allow to cool completely. This softens the tamarind and makes it easier to extract the pulp.

  • In a blender, combine the ginger, jaggery, salt, red chili powder, and the soaked tamarind (without the water). Blend into a smooth paste.

  • Add the tamarind water to the blender and blend again until completely smooth. Transfer the mixture to a large bowl.

  • Heat the sesame oil in a wok or pan. Add the mustard seeds, chana dal, and dried red chilies. Sauté until the chana dal turns reddish-brown and the mustard seeds pop. This tempering process infuses the oil with flavor.
