Ingredients

- 1 cup All-Purpose Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1/4 cup Ghee
- 1/2 - 3/4 cup Water approximately, to form a soft dough
For the Spread
- 3 tbsp Rice Flour
- 2 tbsp Ghee
For the Sugar Syrup
- 2 cup Sugar
- 1.5 cup Water
- 3 cup Vegetable Oil for deep frying
Instructions
Prepare the Dough
- In a bowl, combine all-purpose flour, baking soda, salt, and ghee. Mix well to prevent lumps.
- Gradually add water and knead into a soft, pliable dough, similar in consistency to chapati dough. Let the dough rest for at least 30 minutes.
Make the Sugar Syrup
- In a saucepan over low heat, combine sugar and water. Stir continuously until the sugar dissolves and the syrup reaches a string consistency (it coats the back of a spoon).
- Remove from heat and set aside.
Prepare the Spread
- In a small bowl, mix rice flour and ghee to form a smooth paste.
Assemble and Fry the Kaja
- Divide the rested dough into small balls. Roll each ball into a very thin chapati.
- Spread the rice flour and ghee paste evenly over one chapati. Top with another chapati and repeat the process, creating a stack of 4-5 chapatis.
- Roll the stack into a tight log, then cut into 1-inch pieces. Gently pinch the corners of each piece to maintain its shape during frying.
- Slightly flatten each piece.
- Heat vegetable oil in a large pan or wok over medium-high heat. Reduce heat to medium-low and carefully add the kaja pieces to the hot oil, ensuring not to overcrowd the pan.
- Fry until golden brown on both sides, turning occasionally.
Soak and Serve
- Immediately transfer the fried kajas to the warm sugar syrup and soak for 5 minutes.
- Remove from the syrup and place on a wire rack to drain excess syrup. Serve warm or at room temperature.
