Ingredients
Sesame Seeds
- 1/2 cup Sesame Seeds white
- 2 tbsp Sesame Seeds black
Nuts & Seeds
- 3 tbsp Almonds slivered or chopped
Dairy & Sweetener
- 250 gm Mawa khoya (reduced milk solids); can be grated for easier roasting
- 1/2 cup Sugar confectioners' sugar/icing sugar, powdered
- 1 1/2 tsp Cardamom Powder
- 1-2 tbsp Ghee for greasing hands if needed
Instructions
Roast the Sesame Seeds
- Roast white sesame seeds in a pan over medium heat, stirring constantly until lightly browned and fragrant. Remove from heat and set aside to cool.
- Repeat the roasting process with the black sesame seeds.
Toast the Almonds
- Toast the almonds in the same pan over low heat until lightly browned. Remove and let cool.
Prepare the Dry Ingredients
- Pulse the white sesame seeds in a food processor until coarsely ground (avoid over-processing).
- In a large bowl, combine the ground white sesame seeds, powdered sugar, and cardamom powder. Add the cooled black sesame seeds.
- Pulse the almonds in the food processor until finely chopped and add to the sesame seed mixture. Set aside.
Roast the Khoya
- In a heavy-bottomed pan or wok, roast the mawa (khoya) over medium heat for 5-6 minutes, stirring frequently, until itβs lightly browned and fragrant. (Grating the khoya before roasting makes this step easier).
Combine and Shape the Laddu
- Turn off the heat and immediately add the dry ingredient mixture to the roasted khoya. Mix thoroughly and quickly. Be cautious of the heat.
Form the Laddu
- Once the mixture is cool enough to handle but still warm, start shaping it into small balls (laddu). If the mixture is too sticky, lightly grease your hands with ghee or butter.
Cool and Serve
- Allow the laddu to cool completely before serving. Store in an airtight container at room temperature.
