Ingredients
For the Sesame Seeds
- 1 cup (100g) Sesame Seeds til, white sesame seeds are preferred.
For the Jaggery Syrup
- 100g grams Jaggery gur
- 2 tsp Clarified Butter ghee, desi ghee preferred for authentic flavor.
- 100g grams Mawa
Instructions
Prepare the Sesame Seeds
- Dry roast the sesame seeds in a low flame until they puff up and turn lightly brown. Remove from heat and set aside.
Prepare the Khoya
- Dry roast the khoya in a pan over low heat until it becomes soft, lightly browned, and loses its raw taste. Remove from heat and set aside.
Make the Jaggery Syrup
- Melt the ghee in the same pan. Add the jaggery and water, stirring constantly until the jaggery dissolves completely and forms a syrup.
Cook the Jaggery Syrup
- Continue to cook the syrup over low heat until it begins to bubble and thicken. Perform the string test: drop a small amount of syrup into a glass of water. If it forms a soft ball that doesn't spread immediately, it is ready.
Combine Ingredients
- Add the roasted khoya to the jaggery syrup and mix well. Then, add the roasted sesame seeds and stir until everything is thoroughly combined and forms a thick, cohesive mass.
Set the Barfi
- Keep the heat on the lowest setting and continue cooking until the mixture becomes dense and firm enough to hold its shape. This will take a few more minutes.
Finish and Serve
- Pour the mixture into a greased plate or tray. Garnish with chopped nuts. Allow it to cool and set completely for at least 3-4 hours, or until firm.
Cut and Store
- Once completely set, cut the barfi into desired shapes and sizes. Store in an airtight container at room temperature for up to a week.
