Ingredients
For the Rice Base
- 1 cup Basmati Rice long-grain preferred, raw
- 1 cup Jaggery finely grated or powdered
- 1 1/2 cup Water or as needed for jaggery syrup
- 4 tbsp Ghee
For the Garnish
- 1 tsp Cardamom Powder finely ground
- 10 Cashews roughly chopped
- 10 Raisins
- 1/2 cup Coconut optional, shredded
- 1/4 tsp Salt a pinch
Instructions
Prepare the Rice
- Dry roast 1 cup of basmati rice in a pan over medium heat until golden brown and fragrant. Be careful not to burn it.
Grind the Rice
- Transfer the roasted rice to a blender or grinder and pulse until it's coarsely ground, resembling semolina (rava).
Make the Jaggery Syrup
- In a saucepan, combine 1 cup of grated jaggery with 1 1/2 cups of water. Bring to a boil, stirring constantly until the jaggery dissolves completely. Strain the syrup through a fine-mesh sieve to remove any impurities.
Combine Rice and Jaggery
- Add the ground rice to the jaggery syrup in a heavy-bottomed pan. Stir continuously over low heat to prevent lumps from forming. Cook until the rice is cooked through and the syrup is absorbed. Add 2 tablespoons of ghee at intervals to prevent sticking.
Add Spices and Ghee
- Stir in the cardamom powder and the remaining 2 tablespoons of ghee. Mix well.
Cook in a Pressure Cooker
- Transfer the mixture to a greased pan or a small pressure cooker. Cook in the pressure cooker for 3 whistles over medium heat. Allow the pressure to release naturally.
Garnish and Serve
- In a separate pan, sauté the cashews, raisins, and coconut (if using) in 1 tablespoon of ghee until lightly golden. Stir this mixture into the cooked Thiruvathirai Kali. Serve warm or at room temperature.
