Prepare the Chutney

  • Heat the oil in a pan over medium heat. Add the coriander seeds and cumin seeds and sauté until fragrant (about 30 seconds).
  • Add the minced garlic, curry leaves, and dry red chilies. Sauté for another minute until fragrant.
  • Add the chopped spring onions, red onion, and tomato. Cook for 5-7 minutes, stirring occasionally, until the onions and tomatoes soften.
  • If using, add turmeric powder and sugar at this stage. Stir to combine and cook for another minute.
  • Remove from heat and allow to cool slightly.

Blend and Serve

  • Once cooled, transfer the mixture to a blender. Blend until smooth, adding a little water if necessary to achieve desired consistency.
  • Taste and adjust seasoning with salt as needed.
  • Serve immediately or store in an airtight container in the refrigerator for up to a week. Enjoy!
