Ingredients
For the Mushroom Filling
- 1 cup Button Mushrooms sliced
- 1 clove Garlic minced
- 1 Chili finely chopped (optional), green
- 1.5 Spring Onions finely chopped
- 1/4 tsp Pepper black
- 1/4 tsp Salt
For the Omelette
- 2 Large Eggs
- 2 tbsp Cream or milk
- 1 tbsp Butter
Instructions
Prepare the Mushroom Filling
- Heat 1/2 tbsp butter in a pan over medium heat. Add minced garlic and green chili (if using), and sauté for 30 seconds until fragrant.
- Add sliced mushrooms and cook for 5-7 minutes, or until softened and lightly browned. Stir in spring onions and season with salt and pepper. Remove from heat and set aside.
Make the Omelette
- Whisk eggs, cream (or milk), salt, and pepper together in a bowl until light and frothy.
- Heat remaining 1/2 tbsp butter in a non-stick pan over medium heat.
- Pour the egg mixture into the pan and let it cook undisturbed for a minute or two, until the edges start to set.
- Add the mushroom mixture to one half of the omelette.
- Using a spatula, gently fold the other half of the omelette over the filling.
- Cook for another 2-3 minutes, or until the eggs are cooked through and the omelette is golden brown on both sides.
Serve
- Slide the omelette onto a plate and serve immediately. Enjoy!
