Prepare the Mushroom Filling

  • Heat 1/2 tbsp butter in a pan over medium heat. Add minced garlic and green chili (if using), and sauté for 30 seconds until fragrant.
  • Add sliced mushrooms and cook for 5-7 minutes, or until softened and lightly browned. Stir in spring onions and season with salt and pepper. Remove from heat and set aside.

Make the Omelette

  • Whisk eggs, cream (or milk), salt, and pepper together in a bowl until light and frothy.
  • Heat remaining 1/2 tbsp butter in a non-stick pan over medium heat.
  • Pour the egg mixture into the pan and let it cook undisturbed for a minute or two, until the edges start to set.
  • Add the mushroom mixture to one half of the omelette.
  • Using a spatula, gently fold the other half of the omelette over the filling.
  • Cook for another 2-3 minutes, or until the eggs are cooked through and the omelette is golden brown on both sides.
