Ingredients
Dhokla Batter
- 1/2 cup Gram Flour besan
- 1 tbsp Semolina sooji
- 1/2 tsp Turmeric powder
- 1 pinch Salt
- 1 pinch Sugar
- 1/2 cup Yogurt
- 1/4 cup Water
- 1 tsp Baking Soda
Tempering
- 1 tbsp Oil
- 1/2 tsp Mustard Seeds
- a few Curry Leaves
- 4-5 Chilies green, slit
- 1 pinch Asafoetida hing
- 1 tbsp Sugar
- 1/4 cup Water
- 1 handful Cilantro chopped, for garnish
Instructions
Dhokla Batter Preparation
- In a mixing bowl, combine the chickpea flour, semolina, turmeric powder, salt, a pinch of sugar, and yogurt.
- Gradually whisk in 1/4 cup of water to form a smooth batter. Let the batter rest for 20 minutes to allow the flours to hydrate. This will result in a lighter, fluffier dhokla.
- Meanwhile, prepare a steamer by filling a pot with about 2 inches of water and bringing it to a simmer. Place a steaming rack or a metal stand inside the pot, ensuring it sits above the water level. Grease a dhokla mold or a similar-sized baking dish and set it aside.
- Just before steaming, whisk the baking soda into the batter. The baking soda reacts with the acidic yogurt to create air bubbles, giving the dhokla its signature spongy texture. Quickly pour the batter into the greased mold.
- Place the filled mold on the steaming rack, cover the pot with a tight-fitting lid, and steam for 20 minutes. To ensure the dhokla is cooked through, insert a toothpick into the center. If it comes out clean, it's ready.
For tempering
- While the dhokla is steaming, prepare the tempering. Heat the oil in a small pan over medium heat. Add the mustard seeds and allow them to splutter. This releases their aromatic flavor.
- Add the curry leaves, slit green chilies, and asafoetida to the pan. Sauté for a few seconds until fragrant.
- Pour in 1/4 cup of water and the sugar. Bring to a simmer and then remove from heat.
- Once the dhokla is cooked, let it cool slightly before inverting it onto a serving plate. Cut into squares.
- Pour the prepared tempering evenly over the dhokla. Garnish with fresh cilantro and serve. Dhokla is traditionally enjoyed with coriander chutney.
