Ingredients
Vegetables
- 2 medium Ridged Gourd approximately 8 ounces total; choose small, torai, tender gourds.
- 1 medium Onion finely chopped
- 1 medium Tomato finely chopped
Spices & Aromatics
- 1 tbsp Garlic minced
- 1 tbsp Ginger minced
- 0.5 tbsp Cumin Seeds
- 1 Bay Leaf tej patta
- 2 Cloves
- 1 Cardamom black
- 1 tbsp Chili Powder adjust to taste, red
- 2 tbsp Coriander Powder dhania
- 0.5 tbsp Turmeric Powder haldi
- 0.5 tbsp Garam Masala freshly ground is best
Instructions
Preparation
- Peel and dice the ridged gourd into small, bite-sized cubes.
Tempering the Spices
- Heat the olive oil in a wok or pan over medium heat. Add the bay leaf, cloves, and black cardamom. Sauté until fragrant (about 30 seconds).
- Add the cumin seeds and sauté until they turn dark brown and fragrant.
Sautéing Aromatics
- Add the minced garlic and ginger to the pan. Sauté for about a minute until fragrant and lightly golden.
- Add the finely chopped onion and sauté until softened and translucent.
Building the Flavor
- Add the red chili powder, coriander powder, and turmeric powder. Stir well and cook for 1 minute, adding 2 tablespoons of water to prevent sticking.
- Add the chopped tomatoes and salt. Cook until the tomatoes soften and release their juices (about 5 minutes).
Cooking the Gourd
- Add the diced ridged gourd to the pan. Stir well and cook until the gourd is tender (about 10-15 minutes), stirring occasionally to prevent sticking.
- Stir in the garam masala and yogurt. Cook for another 5 minutes to allow the flavors to meld and the sauce to slightly thicken.
Serving
- Garnish with fresh coriander leaves.
- Serve hot with chapatis, naan, or steamed rice.
