  • 1 medium Onion finely chopped
  • 1 medium Tomato finely chopped

  • Peel and dice the ridged gourd into small, bite-sized cubes.

Tempering the Spices

  • Heat the olive oil in a wok or pan over medium heat. Add the bay leaf, cloves, and black cardamom. Sauté until fragrant (about 30 seconds).
  • Add the cumin seeds and sauté until they turn dark brown and fragrant.

Sautéing Aromatics

  • Add the minced garlic and ginger to the pan. Sauté for about a minute until fragrant and lightly golden.
  • Add the finely chopped onion and sauté until softened and translucent.
