  • Wash the moong dal thoroughly under cold water until the water runs clear. This removes any impurities and excess starch.
  • Soak the dal in enough water to cover it completely for at least 30 minutes. Soaking helps the dal cook faster and more evenly.
  • Drain the soaking water and add the dal to a pressure cooker along with 1 1/2 cups of fresh water and turmeric powder. The turmeric adds color and a subtle earthy flavor.
  • Pressure cook over medium heat for 3 whistles. Allow the pressure to release naturally.
  • Once the pressure is released, gently mash the dal with a spoon or whisk. This creates a creamier texture.
  • Heat the cooking oil in a separate pan over medium heat. Add the mustard seeds and let them splutter. This releases their characteristic nutty aroma.
  • Add the cumin seeds and green chilies. Sauté for about 30 seconds until fragrant.
  • Add the chopped tomatoes and curry leaves. Cook until the tomatoes soften slightly, about 2-3 minutes.
  • Stir in the red chili powder, coriander powder, and salt. Mix well to combine.
  • Add the cooked dal to the pan and stir to combine with the tempering. Add a little water if needed to adjust the consistency to your preference.
  • Simmer the dal for 2-3 minutes, allowing the flavors to meld.
  • Remove from heat and stir in the lemon juice. The lemon juice adds a bright, tangy note that balances the spices.
