Ingredients
For the Tomato Layer
For the Carrot Layer
- 1 cup Carrot boiled and pureed
- 3 tbsp Sugar
- 2 tbsp Ghee
- 3 tbsp Milk Powder
- 1/4 cup Walnuts crushed
For the Beetroot Layer
- 1 cup Beetroot boiled and pureed
- 2 tbsp Sugar
- 1 tsp Ghee
- 1/4 cup Pistachios chopped
For the Filling
- 1/2 cup Cottage Cheese cottage cheese
- 1/2 cup Mawa
- 2 tbsp Cashews crushed
- 1/4 tsp Cardamom Powder
- 1 tbsp Sugar
- 1 tbsp Water to adjust consistency if needed
For Garnish
- Fruits as needed, chopped apricots, cranberries, dried, mixed, such as raisins
Instructions
Prepare the Tomato Layer
- Heat a kadai (wok) and add the tomato puree. Cook for 3 minutes, then gradually add sugar, desi ghee, ground cloves, and crushed cashews. Simmer until the mixture thickens and the ghee separates.
Prepare the Carrot Layer
- Heat a separate kadai and add the carrot puree. Add desi ghee, sugar, crushed walnuts, and milk powder. Stir continuously until the mixture thickens and the ghee separates.
Prepare the Beetroot Layer
- Heat another kadai and add the beetroot puree. Boil for 10 minutes, then add sugar, desi ghee, and chopped pistachios. Simmer until the mixture thickens and the ghee separates.
Prepare the Filling
- Heat a kadai and add the paneer, khoya, crushed cashews, cardamom powder, and sugar. Cook for 3 minutes, stirring constantly until well combined and smooth. Add a tablespoon of water if needed to adjust the consistency.
Assemble and Chill the Sweetu Sandwich
- Line a square baking tray with aluminum foil and grease lightly. Spread the tomato mixture evenly in the tray. Top with the carrot mixture, spreading evenly. Next, spread the paneer filling evenly, followed by the beetroot mixture, spreading evenly. Garnish with mixed dried fruits.
- Refrigerate for at least 2 hours to allow the layers to set. Cut into desired shapes and serve chilled.
