  • In a saucepan, bring the milk to a boil. Reduce the heat and simmer until it reduces from 1 ½ cups to 1 cup. This concentrates the milk's flavor. Chill the reduced milk in the refrigerator.

  • Peel and chop the mangoes. Set aside ½ cup of chopped mango for garnish. Purée the remaining mango until smooth. Add sugar to taste, adjusting according to the sweetness of the mangoes. If the purée is too thick, add a little water to thin it out.

  • Strain the sabja seeds and vermicelli noodles. Now, you're ready to layer your falooda.
  • In the chilled glasses, begin layering the ingredients. You can repeat the layers as desired. Repeat these layers once or twice.
