Ingredients
For the Mango Purée
- 1 cup Mango Purée
For the Falooda
- 1 ½ cup Milk
- 2 Mangoes for purée and garnish, ripe
- 2 Tbsp Sabja Seeds basil seeds
- 2 Tbsp Vermicelli Noodles broken into smaller pieces
- 4 scoop Mango Ice Cream
- ½ cup Cream whipped
For the Garnish
- 3 Pistachios sliced
- 4 Cherries
Instructions
- Chill two serving glasses and ½ cup of water in the freezer. This will help keep the falooda cool.
- In a saucepan, bring the milk to a boil. Reduce the heat and simmer until it reduces from 1 ½ cups to 1 cup. This concentrates the milk's flavor. Chill the reduced milk in the refrigerator.
- Peel and chop the mangoes. Set aside ½ cup of chopped mango for garnish. Purée the remaining mango until smooth. Add sugar to taste, adjusting according to the sweetness of the mangoes. If the purée is too thick, add a little water to thin it out.
- Place the sabja seeds in a small bowl and pour ¼ cup of cold water over them. Set aside to soak. The seeds will swell and become gelatinous.
- In a saucepan, bring ½ cup of water to a boil. Add the vermicelli noodles and cook for 4-5 minutes, or until translucent. Drain the hot water and immediately add the cooked vermicelli to the chilled water from the freezer. This stops the cooking process and keeps the noodles from becoming mushy.
- Strain the sabja seeds and vermicelli noodles. Now, you're ready to layer your falooda.
- In the chilled glasses, begin layering the ingredients. You can repeat the layers as desired. A good starting point is 1 tablespoon of sabja seeds, 1 tablespoon of vermicelli noodles, some chopped mango pieces, a layer of chilled reduced milk, and a layer of mango purée. Repeat these layers once or twice.
- Pipe or spoon whipped cream on top of each glass. Add two scoops of mango ice cream.
- Garnish with sliced pistachios and cherries. Serve immediately and enjoy the cool, refreshing treat.
