Ingredients
Kiwi Layer
- 1 cup Kiwi pureed
- 1/2 cup Sugar
- 2 tsp Agar-Agar Powder
- 1/8 tsp Nutmeg ground
- 1/8 tsp Cardamom ground
Paneer Layer
- 1 cup Cottage Cheese grated
- 1 cup Mawa grated
- 2 Tbsp Cashews ground
- 1/2 cup Milk Powder
- 1/4 tsp Cardamom ground
Garnish
- 1/4 cup Pistachios chopped, for garnish
Instructions
- In a kadai or wide pan, combine the grated papaya and sugar. Cook over medium heat until the mixture thickens, stirring occasionally. This concentrates the papaya's sweetness and creates a jam-like consistency.
- In a separate pan, combine the kiwi puree, sugar, and agar-agar powder. Cook for 2 minutes over medium heat, stirring constantly. Agar-agar is a gelling agent that will set the kiwi layer. Add the cardamom and nutmeg, and continue stirring until the mixture thickens. The kiwi layer should be thick enough to hold its shape.
- In another pan, combine the grated paneer, khoya, ground cashews, and milk powder. Simmer for 2 minutes over low heat, stirring constantly. Cooking the paneer mixture helps to meld the flavors and create a smooth, cohesive layer. Transfer the mixture to a grinder and blend until smooth. This ensures a creamy, uniform texture. Mix in the ground cardamom.
- Lightly grease a bowl or tray. Spread the paneer mixture evenly over the base. This forms the first layer of the sandesh.
- Spread the papaya mixture over the paneer layer, ensuring an even distribution.
- Finally, spread the kiwi mixture over the papaya layer, completing the tricolor design.
