Ingredients
 

For the Mango Mixture

  • 1 Mango raw mango with mild sourness; about 1 pound, semi-ripe
  • 200 gm Jaggery powdered
  • 1 Chili green, slit; adjust to your spice preference
  • 1/4 tsp Salt
  • 2 cup Water for boiling mangoes

Prepare the Mango

  • Peel and thinly slice the raw mango. Boil the mango slices in 2 cups of water until soft and cooked through.

Add Spices and Jaggery

  • Add the slit green chili and salt to the cooked mangoes. Dissolve the jaggery in 1/2 cup of water, strain to remove impurities, and add to the mango mixture. Simmer until the raw smell disappears and a thick, jelly-like consistency is reached.

Prepare the Tempering

  • Heat 1 tablespoon of ghee in a small pan. Add mustard seeds and let them splutter.

Fry Neem Flowers and Garnish

  • Fry the neem flowers in the remaining 3 tablespoons of ghee until golden brown. Garnish the mango pachadi with the fried neem flowers and serve warm or at room temperature.

  • For a sweeter Pachadi, increase the amount of jaggery. For a more tart flavor, use more raw mangoes.
  • If using dried neem flowers, soak them in warm water for 10 minutes before frying to soften them.
