- 1 cup Dates medjool or deglet noor dates recommended; soak in warm water for at least 30 minutes to soften, then chop.

- 1/2 cup Tamarind Paste
- 1/2 cup Jaggery grated or powdered
- 1 tsp Chili Powder adjust to your spice preference
- 1 tsp Garam Masala five-spice blend, or your preferred roasted spice mix
- 1/2 tsp Mustard Seeds rai
- 2 Chilies lal mirch, whole; adjust quantity to control heat, dried, red
Instructions
Prepare the Dates
- Chop the soaked dates.
Temper the Spices
- Heat oil in a pan over medium heat. Add the whole dried red chilies and mustard seeds. Cook until the mustard seeds begin to pop and the chilies become fragrant.
Cook the Dates
- Add the chopped dates to the pan and stir for a few seconds. Stir in the grated jaggery, chili powder, grated ginger, and salt. Add 1/4 cup of water, cover the pan, and simmer for 6-7 minutes.
Finish the Dish
- Open the lid and check the consistency. Stir in the tamarind paste and garam masala. Cover again and cook for another minute.
