Ingredients
 

Dates Preparation

  • 1 cup Dates medjool or deglet noor dates recommended; soak in warm water for at least 30 minutes to soften, then chop.

Spices & Flavorings

  • 1 tbsp Oil vegetable or coconut oil
  • 1 tsp Ginger fresh, grated
  • 1.5 tsp Salt or to taste
  • 1/4 cup Water

Prepare the Dates

  • Chop the soaked dates.

Temper the Spices

  • Heat oil in a pan over medium heat. Add the whole dried red chilies and mustard seeds. Cook until the mustard seeds begin to pop and the chilies become fragrant.

Cook the Dates

  • Add the chopped dates to the pan and stir for a few seconds. Stir in the grated jaggery, chili powder, grated ginger, and salt. Add 1/4 cup of water, cover the pan, and simmer for 6-7 minutes.

Finish the Dish

  • Open the lid and check the consistency. Stir in the tamarind paste and garam masala. Cover again and cook for another minute.

Serve

  • Remove from heat and let cool slightly to room temperature. Serve warm or at room temperature as a side dish, condiment, or part of a larger meal.
