  • 3 medium Mango mangoes, raw

  • Wash and peel the raw mangoes. Chop them into bite-sized or long, random pieces. Avoid making them too small or too large.

Sautéing Spices and Mangoes

  • Heat ghee in a small pan over medium heat. Add mustard seeds and fenugreek seeds; allow them to splutter. Add asafoetida and immediately add the chopped mangoes. Sauté for 2-3 minutes.

Simmering and Flavoring

  • Add cumin seeds, red chili powder, and turmeric powder. Sauté briefly for another minute. Add water to just submerge the mangoes.

Cooking and Finishing

  • Cover and cook until the mangoes are tender, about 10-15 minutes, or until easily pierced with a fork. Stir in the powdered jaggery and mix well until dissolved. Gently stir in neem flowers (if using). Adjust salt to your taste. Serve warm or at room temperature.
