Ingredients
Dates & Nuts
- 500 gm Dates medjool dates are recommended, pitted
- 1/2 cup Almonds chopped
- 1/2 cup Cashews chopped
- 1/2 cup Pistachios chopped
Seeds & Spices
- 1 tsp Melon Seeds optional
- 3 tbsp Poppy Seeds also known as khus khus
Fat
- 2 tbsp Ghee clarified butter. can substitute with coconut oil for a vegan option.
Instructions
Prepare the Dates
- Roughly chop the pitted dates. If using a food processor, pulse until coarsely ground, taking care not to over-process and create a paste.
Roast the Nuts and Seeds
- Dry roast the poppy seeds in a pan over medium heat for 2-3 minutes, or until fragrant. Set aside. In the same pan, heat 1 tablespoon of ghee and roast the chopped nuts and melon seeds (if using) for 3-4 minutes, or until lightly golden and fragrant. Set aside.
Combine and Cook
- Heat the remaining 1 tablespoon of ghee in the pan. Add the ground dates and cook over medium heat for 3-4 minutes, stirring frequently, until softened and slightly sticky. Stir in the roasted nuts and poppy seeds. Mix well to combine thoroughly.
Shape and Set
- Remove the mixture from the heat and let it cool slightly (about 5 minutes), until it's still pliable but not too hot to handle. On a piece of parchment paper or plastic wrap, shape the mixture into a log or roll. Alternatively, form into small balls (ladoos).
Coat and Chill
- Roll the log/ladoos in the remaining poppy seeds to coat evenly. Wrap the roll tightly in plastic wrap or aluminum foil and refrigerate for at least 30 minutes to firm up.
Serve and Store
- Once chilled, slice the roll into bite-sized pieces and store in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
