  • Roughly chop the cashews and almonds into 5-6 pieces each. Roughly chop the pistachios as well and set aside.
  • Remove the pits from the dates and chop them into small pieces.
  • Pulse the chopped dates in a food processor until a coarse paste forms, or mash them thoroughly by hand.
  • In a pan over medium heat, dry roast the chopped cashews and almonds for about 3 minutes, or until they turn lightly golden and fragrant. This enhances their nutty flavor and adds a pleasant crunch. Transfer the toasted nuts to a bowl and set aside.
  • In the same pan, dry roast the poppy seeds until they become fragrant and slightly darker in color. Transfer to a bowl and set aside.
  • Add the ghee to the pan. Add the chopped dates and cook, stirring constantly, until they soften and become pliable. This helps to meld the flavors and create a smooth base for the burfi.
  • Add the roasted cashews, almonds, and cardamom powder to the pan with the dates. Mix well to combine.
  • Add half of the roasted poppy seeds to the date and nut mixture. Reserve the remaining poppy seeds for coating the burfi later.
  • Continue to cook the mixture over low heat, stirring constantly, until it thickens and starts to pull away from the sides of the pan. Transfer the mixture to a plate or tray lined with parchment paper and let it cool slightly.
  • Lightly grease your hands with ghee. Divide the date and nut mixture into small portions and shape each portion into a cylindrical log.
  • Spread the reserved poppy seeds and finely chopped pistachios on a plate or cutting board.
  • Roll each burfi log in the poppy seed and pistachio mixture, ensuring it's evenly coated.
  • Wrap each burfi log tightly in aluminum foil.
  • Refrigerate the wrapped burfi for at least 2 hours, or until firm. Once firm, remove from the refrigerator and slice into ½-cm thick rounds or squares.
  • Store the burfi in an airtight container at room temperature for up to 2-3 months.
