Ingredients
Dough Ingredients
- 1 cup All-Purpose Flour
- 2 cup Whole Wheat Flour whole
- 1 tsp Active Yeast dry
- 3/4 cup Water
- 1 tbsp Sugar granulated
- 1 1/2 tsp Salt
- 2 tbsp Milk Powder
- 1 tbsp Flax Seeds
- 4 tbsp Olive Oil unflavored
- 1 tbsp Sesame Seeds for garnish
- 1 Egg for egg wash, or milk
Filling Ingredients
- 1 cup Mozzarella Cheese grated
- 250 gm Chicken cooked, diced; or substitute with 250g diced paneer
- 3 Onions finely chopped
- 10 clove Garlic minced
- 1 tsp Italian Seasoning
- 2 Tomatoes finely chopped
- 1 tsp Pepper black, freshly ground
- 1 1/2 tsp Salt or to taste
- 2 tbsp Butter for brushing after baking
Instructions
Prepare the Dough
- Mix lukewarm water, sugar, and yeast in a bowl. Let stand for 10 minutes until foamy.
- In a large bowl, combine all-purpose flour, whole wheat flour, salt, milk powder, flax seeds, and olive oil. Add the yeast mixture and knead for 7-8 minutes until smooth and elastic. Add a tablespoon of water at a time if the dough is too dry.
- Place the dough in an oiled bowl, cover with plastic wrap, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
Prepare the Filling
- Heat olive oil in a pan over medium heat. Add minced garlic and chopped onions and sauté until softened.
- Add the chopped tomatoes and cook for a few minutes.
- Stir in the cooked chicken (or paneer), Italian seasoning, salt, and pepper. Cook until heated through and the flavors have melded.
- Remove from heat and set aside.
Assemble the Rose Calzone
- Punch down the risen dough and turn it out onto a lightly floured surface. Divide the dough in half.
- Roll out one half into a large circle (about 12 inches in diameter). Place the chicken filling in the center, leaving a 2-inch border. Top with half of the grated mozzarella cheese.
- Cut four slits into the dough from the center to the edge. Fold each section over the filling, tucking the edges under to form a rose bud shape.
- Roll out the second half of the dough into smaller circles (about 4 inches in diameter). Place a spoonful of filling onto one half of each circle, top with the remaining mozzarella cheese, and fold the other half over to form a half-moon shape. Seal the edges with a fork.
- Arrange the smaller half-moon shapes around the rose bud to form petals.
Bake the Calzone
- Place the assembled rose calzone on a baking sheet lined with parchment paper.
- Lightly brush the top with egg wash (or milk) and sprinkle with sesame seeds.
- Let it rise for another 15 minutes.
- Preheat oven to 350°F (175°C).
- Bake for 30-35 minutes, or until golden brown and the cheese is melted and bubbly.
- Brush with butter once done and let cool slightly before serving.
