Ingredients
Dough
- 2 cup All-Purpose Flour
- 2 Tbsp Semolina Flour
- 2 tsp Active Yeast dry
- 1 1/2 tsp Salt
- 3/4 cup Milk warm
- 1 tsp Sugar
- 2 Tbsp Olive Oil
Chicken Filling
- 100 gm Boneless, Chicken Breast cooked and shredded or diced, skinless
- 1 Onion chopped, medium
- 1 tsp Ginger-Garlic Paste
- 1 tsp Rosemary dried, or basil, or thyme
- 1/2 tsp Chili Powder red
- 1 Tbsp Refined Oil
- 1/4 cup Mayonnaise
- 1/2 cup Mozzarella Cheese shredded
- 1 tsp Oregano dried
Instructions
- In a large bowl, combine the warm milk, sugar, and yeast. Let stand for 5-10 minutes until foamy. This activates the yeast and ensures a light and airy dough.
- Add the all-purpose flour, semolina flour, and salt to the yeast mixture. Mix until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Add a little more flour if needed to prevent sticking.
- Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1-2 hours, or until doubled in size.
- While the dough is rising, prepare the chicken filling. Heat the refined oil in a skillet over medium heat. Add the chopped onion and sauté until golden brown.
- Add the ginger-garlic paste and sauté for 1 minute until fragrant.
- Stir in the rosemary, red chili powder, and salt. Add the cooked chicken and cook for a few minutes to heat through.
- Preheat oven to 400°F (200°C). Punch down the risen dough and divide it in half.
- On a lightly floured surface, roll out each dough half into a 10-12 inch circle.
- Spread half of the mayonnaise over each circle, leaving a 1/2-inch border. Top with half of the chicken filling and mozzarella cheese.
- Fold the dough over the filling to form a half-moon shape. Crimp the edges to seal.
- Brush the calzones with olive oil and sprinkle with dried oregano.
- Bake for 20-25 minutes, or until golden brown.
