Activate the Yeast

  • Combine yeast, sugar, and lukewarm water in a bowl. Stir well, cover, and let stand for 15 minutes, or until foamy.

Make the Dough

  • In a large bowl, combine all-purpose flour, salt, yogurt, and the activated yeast mixture. Mix until a shaggy dough forms.

Knead the Dough

  • Turn the dough out onto a lightly floured surface and knead for 10-12 minutes, adding the butter or oil during kneading. The dough should become soft, elastic, and not sticky.

First Rise

  • Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place until doubled in size (about 1-1.5 hours).

Shape the Dough

  • Punch down the risen dough and knead for another 5 minutes. Roll the dough to 1/2-inch thickness and use a 4-inch cookie cutter or knife to cut out circles.

Assemble the Rose Pizza Muffins

  • Brush each dough circle with a little butter. Make 4 diagonal cuts from the edge towards the center, leaving the center intact.

Fill and Shape

  • Place a spoonful of pizza sauce in the center of each circle. Top with mozzarella cheese, and your desired toppings (bell pepper, onion, sausage, corn, oregano, and red pepper flakes).

Close the Roses

  • Take one section of the dough and fold it over the filling. Repeat with the remaining sections, overlapping to create a rose shape. Pinch the dough to seal.

Second Rise

Egg Wash and Bake

  • Preheat oven to 180°C (350°F). Whisk together the egg yolk and milk. Gently brush the egg wash over each rose. Sprinkle with sesame seeds (optional).

Bake and Serve

  • Bake for 15-20 minutes, or until golden brown and cooked through. Remove from the oven and brush with melted butter. Cover to keep soft and serve warm.
