Instructions
Marinate the Chicken
- Butterfly the chicken breasts by cutting them almost in half horizontally, then opening them like a book. In a bowl, combine lemon juice, chili powder, and salt. Marinate the chicken breasts in this mixture for at least 30 minutes, or longer for a deeper flavor.
Prepare the Chicken Filling
- In a separate bowl, combine the crumbled paneer, raisins, chopped cashews, green chilies, mint leaves, coriander leaves, salt, and garam masala. Mix well to create the stuffing.
Stuff and Steam the Chicken
- Stuff the marinated chicken breasts with the paneer mixture. Secure the edges with toothpicks or kitchen twine. Steam the chicken rolls for approximately 20-25 minutes, or until cooked through.
Make the Lauki Gravy
- Heat the oil in a pan or pot. Add cumin seeds, nigella seeds, and shahi jeera. Once they begin to crackle, add the pureed bottle gourd and cook until lightly browned. Stir in the tomato puree and cook for another 2-3 minutes.
Add Spices and Simmer
- Add the ginger-garlic paste and cook for 5-7 minutes. Stir in the cashew, poppy seed, and melon seed paste (if using) and cook for another 5-7 minutes. Add red chili powder, turmeric powder, and mixed spices. Simmer for 2-3 minutes.
Finish the Gravy
- Add water to reach the desired gravy consistency. Season with salt to taste. Gently add the stuffed chicken rolls and simmer for 2-3 minutes, allowing the flavors to meld.
Garnish and Serve
- Transfer the chicken rolls to a serving dish, and pour the gravy over them. Garnish generously with chopped coriander, cashews, raisins, and dried fenugreek leaves. Serve hot and enjoy!
