Ingredients
For the Kheer
- 4 cup Milk whole milk recommended for creaminess
- 1/2 cup Basmati Rice
- 1 cup Strawberry Puree homemade or store-bought
- 1/2 cup Sugar adjust to your sweetness preference
- 1/2 tsp Cardamom Powder ground cardamom (elaichi)
For Garnishing
- 2 tbsp Almonds chopped
- 2 tbsp Cashews chopped
- 2 tbsp Pistachios chopped
- 2 tbsp Coconut shredded
Instructions
Prepare the Rice
- Wash 1/2 cup basmati rice and soak it in water for at least 30 minutes.
Cook the Kheer
- In a heavy-bottomed pan, bring 4 cups of milk to a boil. Add the soaked rice and 1/2 teaspoon of cardamom powder. Stir well.
Simmer and Thicken
- Reduce the heat to low and simmer, stirring frequently, until the rice is cooked and the milk has thickened to a creamy consistency (about 20-25 minutes). Be careful not to burn the kheer.
Add Sweetness and Flavor
- Stir in 1/2 cup of sugar. Continue to simmer until the sugar dissolves completely and the kheer reaches your desired consistency.
Incorporate Strawberry Puree
- Remove from heat and gently stir in 1 cup of strawberry puree. Mix thoroughly.
Garnish and Serve
- Allow the kheer to cool completely. Garnish with 2 tablespoons each of chopped almonds, cashews, pistachios, and shredded coconut. Serve chilled or warm.
