Ingredients
 

Rice & Liquids

  • 1 ltr Milk
  • 1/2 cup Rice basmati rice; short-grain rice can also be used

Sweeteners & Spices

  • 3/4 cup Sugar adjust to your sweetness preference
  • 1/2 tsp Cardamom cardamom powder; elaichi; freshly ground is preferred
  • Pinch Salt

Nuts & Dried Fruits

  • 1/4 cup Raisins
  • 1/4 cup Almonds blanched and slivered
  • 1/4 cup Cashews roasted and coarsely chopped

Other

  • 15 Saffron saffron strands; or 1/4 teaspoon saffron powder
  • 2 tbsp Water for saffron

Instructions
 

Prepare the Rice

  • Wash the basmati rice thoroughly and soak it in water for at least 20 minutes. This helps the rice cook evenly and prevents it from becoming mushy.

Cook the Rice in Milk

  • In a heavy-bottomed pan, bring the whole milk to a gentle simmer over medium heat. Add the soaked rice and stir occasionally to prevent sticking. Reduce heat to low and simmer until the rice is tender but not completely falling apart, about 20-25 minutes.

Infuse Saffron (Optional)

  • In a small bowl, steep the saffron strands in 2 tablespoons of warm water for 10-15 minutes to release their color and flavor.

Combine Ingredients

  • Stir in the sugar, cardamom powder, salt, raisins, almonds, cashews, and the saffron infusion (including the water) into the cooked rice and milk mixture. Mix well to combine all the ingredients.

Simmer and Serve

  • Reduce the heat to low and let the kheer simmer for another 5-7 minutes, stirring occasionally, to allow the flavors to meld. Remove from heat and let it cool slightly.
  • Serve the Rice Kheer warm or chilled, garnished with extra nuts or a sprinkle of cardamom powder if desired.
