Ingredients
Yogurt Mixture
- 1 cup Hung Yogurt greek yogurt
- ½ cup Mango Puree
- ¼ cup Sugar
- ½ cup Milk
- 3 tbsp Milk condensed
Other
- Water for steaming
- 1 ½ Mango chopped, for garnish
- Grapes black, for garnish
- Mint Leaves for garnish
Instructions
- In a blender, combine the hung curd, mango puree, sugar, milk, and condensed milk.
- Blend until the mixture is completely smooth.
- Pour the mixture into a springform pan.
- Gently tap the pan on the counter a few times to release any air bubbles and ensure an even layer.
- Cover the pan tightly with aluminum foil. This creates a seal to prevent condensation from dripping onto the yogurt during steaming.
- Bring a pot of water to a boil. This creates the steam needed to cook the yogurt.
- Carefully place the springform pan into the steamer basket.
- Steam for 20-25 minutes, or until the yogurt is set. It should be firm to the touch.
- Remove the pan from the steamer and let it cool completely at room temperature.
- Once cooled, refrigerate for at least 1 hour to allow the yogurt to chill and firm up further.
- Garnish with chopped mango, black grapes, and fresh mint leaves before serving.
Recipe Notes
Good To Know
- For a perfectly smooth texture, blend the hung curd and mango puree together until completely lump-free before adding the remaining ingredients. Straining the mixture through a fine sieve can further enhance silkiness.
- If you prefer a firmer, cheesecake-like consistency, increase the steaming time by 5-10 minutes and allow the dessert to chill in the refrigerator for several hours or overnight before serving.
- For added flavor and visual appeal, garnish with diced fresh mango, chopped pistachios, or a light drizzle of saffron-infused milk just before serving.
- To make this dessert vegan, substitute hung curd with thick coconut yogurt and use coconut condensed milk for a tropical twist.
Expert Tips
- Adjust the sweetness to your preference by adding more or less sweetener during preparation. Taste the batter before steaming to ensure it's balanced.
- For a richer flavor, roast the mango slices before pureeing. This adds a deeper, caramelized note to the dessert.
- Ensure the steaming container is tightly sealed to prevent excess moisture from dripping onto the dessert.
Storage Instructions
- Store leftover mango dessert in an airtight container in the refrigerator for up to 3 days. Allow it to come to room temperature or warm it slightly before serving.
