Ingredients
For the Bhapa Dohi
For Garnish
- 8 Pistachios shelled and slivered
- 5 Almonds blanched and slivered
- 500 ml Water for steaming
Instructions
Prepare the Steaming Vessel
- Fill a steamer pot or a large heatproof bowl set over a pot of simmering water with about 500ml of water. Ensure the water level is below the top edge of the bowl you'll use for steaming.
Blend the Ingredients
- In a blender, combine the yogurt, condensed milk, and whole milk. Blend until completely smooth and creamy. Avoid over-blending.
Steam the Bhapa Dohi
- Pour the blended mixture into a heatproof mold (ramekins, a small bowl, etc.) or heatproof dish suitable for steaming. Place the mold in the prepared steamer, ensuring the water doesn't touch the mixture. Cover and steam for 15-20 minutes, or until the Bhapa Dohi is set but still slightly jiggly.
Cool and Chill
- Carefully remove the Bhapa Dohi from the steamer. Allow it to cool completely to room temperature. Then, refrigerate for at least 2-3 hours to allow the flavors to meld and the texture to firm up further.
Garnish and Serve
- Garnish the chilled Bhapa Dohi with slivered pistachios and almonds. Serve cool and enjoy!
Recipe Notes
Expert Tips for the Perfect Bhapa Dohi
- Use full-fat yogurt for the richest and creamiest texture.
- Don't over-blend the mixture; a few lumps are acceptable and won't affect the final result.
- Adjust steaming time depending on your steamer and the size of your mold. A toothpick inserted into the center should come out clean when it's done.
- For extra flavor, consider adding a pinch of cardamom powder to the mixture before steaming.
