  • In a large mixing bowl, combine the whole wheat flour, salt, oil, and yogurt. Mix well.
  • Gradually add water while kneading until a soft, pliable dough forms. Kneading develops gluten, which gives the paratha its structure.
  • Cover the dough and let it rest for 20 minutes. This allows the gluten to relax, making the dough easier to roll.
  • While the dough rests, prepare the filling. In a food processor, combine the broccoli florets, green chilies, garlic, and coriander leaves. Pulse until finely chopped.
  • Heat oil in a pan over medium heat. Add the chopped onion and sauté for 2 minutes, or until softened and translucent.
  • Add the broccoli mixture and salt to the pan. Cook for 5-7 minutes, stirring occasionally, until the broccoli is tender.
  • Stir in the grated cheese and cook for another minute, until the cheese is melted and gooey.
  • Remove the filling from the heat and set aside to cool slightly.
  • After the dough has rested, knead it briefly again. Divide the dough into 8 equal portions.
  • Roll each portion into a 4-inch circle. Place a spoonful of the broccoli cheese filling in the center of each circle.
  • Bring the edges of the dough together to enclose the filling completely, forming a ball. Gently flatten the ball.
  • On a lightly floured surface, roll out each filled ball into a 5-inch paratha.
  • Heat a flat griddle or tawa over medium heat. Cook each paratha for 2-3 minutes per side, or until golden brown spots appear and the paratha is cooked through. Use a little oil as needed.
