Ingredients
Potatoes
- 500 gm Potato yukon gold or russet potatoes recommended
Aromatics & Spices
- 1 Onion finely chopped, medium-sized
- 1/2 tsp Turmeric haldi
- 1 tsp Chili Powder adjust to your spice preference
- 10-12 Curry Leaves
- 1/4 tsp Mustard Seeds rai
- 1/4 tsp Gram black, split, urad dal
Instructions
Prepare the Potatoes
- Boil the potatoes until tender. Drain well and mash thoroughly.
Temper the Spices
- Heat the oil in a pan or kadai over medium heat. Add the mustard seeds and split black gram. Wait until they begin to splutter and crackle.
Sauté the Aromatics
- Add the curry leaves and sauté for a few seconds until fragrant. Add the chopped onions and sauté until translucent, about 3-5 minutes.
Combine and Cook
- Add the mashed potatoes, turmeric powder, chili powder, and salt to the pan. Mix everything well to combine. Add 2 tablespoons of water to help create a smoother consistency.
