For the Fish Burgers:

  • 2 lb Potatoes yukon gold or russet, peeled and cubed
  • 1/2 cup Milk or cream
  • 2 tbsp Butter
  • 1/2 tsp Salt
  • 1/4 tsp Pepper black, freshly ground

Instructions
 

Prepare the Fish

  • Marinate fish fillets in barbecue sauce, salt, and pepper for at least 15 minutes.
  • Grill the fish fillets over medium heat for 3-4 minutes per side, or until cooked through.

Make the Mashed Potatoes

  • Boil potatoes until tender. Drain and mash with milk, butter, salt, and pepper.

Steam the Vegetables

  • Steam broccoli and carrots until tender-crisp. Toss with olive oil, salt, and pepper.

Assemble the Burgers

  • Toast the brown bread slices.
  • Layer salad leaves, grilled fish (cut in half if necessary), tomato slices, and pesto (optional) on the bottom bread slice.
  • Top with the remaining bread slice and secure with a toothpick.
  • Serve the fish burger immediately with mashed potatoes and steamed vegetables.
