Make Sugar Syrup
- Grind the sugar into a fine powder using a blender or food processor. Add the powdered sugar to the cream mixture and whisk until completely dissolved.
Blend the Mango and Chili
- Combine 1/4 cup diced mango, half of the green chili, and a pinch of salt in a blender. Add 2 tablespoons of water and blend until you have a smooth paste.
Combine Mango Paste and Cream
- Pour the mango paste into the cream mixture and whisk thoroughly until fluffy.
First Freeze
- Grate the remaining raw mango. Sprinkle half of the grated mango into the cream mixture and whisk gently.
- Pour the mixture into an airtight container and freeze for 5-6 hours, or until partially frozen.
Second Blend
- Blend the remaining grated mango and the remaining green chili with 1 tablespoon of water into a smooth paste.
- Remove the partially frozen ice cream from the freezer and scrape the sides to loosen any ice crystals. Transfer the mixture into a blender.
- Add the blended mango and chili paste and blend until smooth and fluffy.
Final Freeze
- Add the remaining grated mango to the blended ice cream and whisk well.
- Pour the ice cream mixture back into the airtight container and freeze for another 6-8 hours, or until solid.
