Ingredients
 

Dairy

  • 1 cup Milk whole milk, full-fat recommended for creaminess
  • 3/4 cup Heavy Cream fresh, heavy cream adds richness

Sweetener & Spices

  • 3/4 cup Sugar granulated sugar; adjust to your sweetness preference
  • 1 tsp Salt enhances the flavors; adjust to taste

Mango & Chili

  • 3/4 cup Mango peeled, diced; use a ripe but firm mango, raw
  • 1 Chili medium-sized; adjust quantity based on desired spice level. remove seeds for less heat., green

Instructions
 

Prepare the Cream Mixture

  • Pour the milk and heavy cream into a large bowl. Whisk until well combined.

Make Sugar Syrup

  • Grind the sugar into a fine powder using a blender or food processor. Add the powdered sugar to the cream mixture and whisk until completely dissolved.

Blend the Mango and Chili

  • Combine 1/4 cup diced mango, half of the green chili, and a pinch of salt in a blender. Add 2 tablespoons of water and blend until you have a smooth paste.

Combine Mango Paste and Cream

  • Pour the mango paste into the cream mixture and whisk thoroughly until fluffy.

First Freeze

  • Grate the remaining raw mango. Sprinkle half of the grated mango into the cream mixture and whisk gently.
  • Pour the mixture into an airtight container and freeze for 5-6 hours, or until partially frozen.

Second Blend

  • Blend the remaining grated mango and the remaining green chili with 1 tablespoon of water into a smooth paste.
  • Remove the partially frozen ice cream from the freezer and scrape the sides to loosen any ice crystals. Transfer the mixture into a blender.
  • Add the blended mango and chili paste and blend until smooth and fluffy.

Final Freeze

  • Add the remaining grated mango to the blended ice cream and whisk well.
  • Pour the ice cream mixture back into the airtight container and freeze for another 6-8 hours, or until solid.

Serve

  • Remove the ice cream from the freezer, let it sit at room temperature for 5-10 minutes to soften slightly, then scoop and serve chilled. Garnish with fresh mint leaves (optional).
