Prepare the Potato Filling

  • Heat 1 tbsp oil in a pan. Add ½ tsp mustard seeds and ½ tsp cumin seeds. Once they splutter, add the chopped onion and green chili. Sauté until the onion is translucent.
  • Add the turmeric powder, mashed potatoes, salt, and red chili powder. Sauté for 2-3 minutes.
  • Stir in the tomato ketchup and chopped coriander. Remove from heat and set aside.

Prepare the Yogurt Topping

  • In a bowl, whisk the yogurt until smooth.
  • Heat 1 tbsp oil in a small pan. Add ½ tsp mustard seeds and ½ tsp cumin seeds. Once they splutter, add the curry leaves and immediately remove from heat.
  • Pour this tempering into the yogurt and mix well. Season with salt and black pepper.

Assemble and Cook the Idlis

  • Cut the bread slices into round shapes using a cookie cutter or knife.
  • Spread a layer of the potato mixture on one side of each bread slice. Place the bread slices, potato-side down, onto a lightly oiled non-stick pan or griddle.
  • Spread the yogurt mixture evenly over the top of each bread slice. Cover the pan with a lid.
  • Cook until the bread is golden brown and the filling is heated through, about 3-4 minutes per side.
  • Serve hot with tamarind chutney or green chutney and enjoy!
