Ingredients
For the Bread Idlis
- 3 slices Bread cut into round shapes using a cookie cutter or knife., brown
- 2 medium Potatoes peeled and chopped. you can also use store-bought or homemade vegetable cutlets (corn, etc.)., spinach
- 1 tbsp Oil for shallow frying the potatoes.
- 1/2 cup Yogurt also known as curd.
- 1/2 tsp Mustard Seeds also known as rai. dry roast lightly for a deeper flavor.
- 10-12 Curry Leaves
For Serving
- 1/2 cup Coriander Chutney green
- 1/2 cup Tamarind Chutney
- 1/4 cup Pomegranate Seeds optional, for garnish.
- 2 tbsp Chickpea Noodle optional, for garnish. bhujia can also be used.
Instructions
Prepare the Yogurt Mixture
- Mix the yogurt and mustard seeds in a small bowl. Set aside.
Cook the Potato Cutlets
- Heat oil in a non-stick pan over medium heat. Add the chopped potatoes and cook until golden brown and tender. Set aside.
Assemble and Cook the Bread Idlis
- Place a potato cutlet in the center of each round bread slice. Top with 1-2 teaspoons of the yogurt mixture, ensuring the bread edges are slightly sealed to resemble an idli.
- Cook in the same pan for 5 minutes on each side, or until the bread is lightly golden and heated through. Be careful not to overcook the bread.
Serve
- Arrange the cooked Bread Idlis on a serving plate. Top with green chutney. Garnish with pomegranate seeds and sev. You can also toast leftover bread slices, brush them with chutneys and garnish with sev for an extra side dish.
