Ingredients
Bread & Batter Base
- 6 slices Bread
- ½ cup Rice Flour
- ¼ cup Semolina rava
- ½ cup Yogurt curd
Aromatics & Spices
For Frying
- 2 tbsp Oil for frying
Instructions
- Crumble the bread slices into small pieces in a large mixing bowl.
- Add the rice flour, semolina, yogurt, chopped onion, cilantro, grated ginger, cumin seeds, green chilies, and salt to the bowl.
- Mix all the ingredients thoroughly until a soft dough forms. Add a little more yogurt if the dough seems too dry.
- Divide the dough into lemon-sized portions. Gently flatten each portion into a small disc.
- Lightly grease your palms with oil to prevent sticking. Make a small hole in the center of each vada. This helps them cook evenly.
- Heat sufficient oil in a heavy-bottomed pan or kadai over medium-high heat. Once the oil is hot, gently slide the vadas into the pan, ensuring not to overcrowd.
- Fry the vadas until they turn golden brown and crispy, flipping them occasionally for even cooking.
- Remove the vadas from the oil and drain them on absorbent paper to remove excess oil.
- Serve the Instant Bread Medu Vada hot with coconut chutney or sambar.
Recipe Notes
Good To Know
- You can use any type of bread, such as brown, multigrain, white, or leftover bread.
- For a fluffier texture, add a pinch of baking soda.
- Boost the nutritional value by adding grated carrots, capsicum, or other vegetables of your choice.
- Enhance the flavor with black pepper or small coconut pieces.
- If the batter is too watery, add more rice flour and rava (semolina) and knead until a soft dough forms.
Expert Tips
- Don't overmix the batter, as this can make the bread pakora dense. Mix until just combined.
- For extra crispy pakoras, deep-fry them in hot oil until golden brown.
- Serve immediately with your favorite chutney or sauce for the best flavor and texture.
Storage Instructions
- Bread pakora is best enjoyed fresh. However, leftover pakoras can be stored in an airtight container at room temperature for a few hours.
- For longer storage, refrigerate for up to 1 day. Reheat in a toaster oven or dry skillet until warmed through and crispy.
