Chicken & Aromatics

  • 1 kg Chicken bone-in, cut into serving pieces
  • 6 Garlic Cloves crushed
  • 3-4 Chilies finely chopped, green, or to taste; adjust to your spice preference
  • 1/2 tsp Kashmiri Chili Powder for color and mild heat; can substitute with paprika for a milder flavor

  • 4.5 tbsp Lemon Juice freshly squeezed
  • 1 tbsp Pepper black, freshly ground
  • 1.5 tsp Salt or to taste

Prepare the Chicken

  • In a bowl, combine the chicken pieces with 1 tbsp of lemon juice, 1 tsp salt, and half the crushed garlic. Marinate for at least 30 minutes (longer is better).

Sauté Aromatics

  • Heat the vegetable oil and butter in a large pan or pot over medium heat. Add the remaining crushed garlic and green chilies. Sauté for 2-3 minutes, until fragrant.

Cook the Chicken

  • Add the marinated chicken to the pan. Cook, stirring occasionally, until browned on all sides. Add the Kashmiri chili powder and black pepper. Stir to combine.

Simmer and Finish

  • Pour in the remaining lemon juice. Reduce heat to low, cover the pan, and simmer for 20-25 minutes, or until the chicken is cooked through and tender. Add more salt if needed.

Garnish and Serve
