Ingredients
For the Rice
- 2 cup Basmati Rice rinse thoroughly before cooking. boil according to package directions until tender.
For the Paneer and Vegetables
- 150 gm Cottage Cheese indian cottage cheese, cut into 1-inch cubes
- 1 Bell Peppers any color, diced
- 2 Chilies finely chopped, green
- 1 medium Onion finely chopped
- 2 clove Garlic minced
- 1 inch Ginger minced
For Seasoning and Flavor
- 2 tbsp Cheese cheddar or mozzarella recommended, grated
- 1.5 tsp Salt or to taste
- 1 tsp Oregano Flakes
- 1/2 tsp Chili Flakes or to taste, red
- 2 tbsp Vegetable Oil
- 1/4 tsp Pepper black, freshly ground
Instructions
Prepare the Paneer
- Heat 1 tbsp oil in a pan. Add paneer cubes, oregano, and salt. Sauté until lightly browned. Set aside.
Sauté the Vegetables
- In the same pan, add remaining oil. Sauté onion, bell pepper, green chilies, garlic, and ginger until softened. Add salt, red chili flakes, and black pepper.
Combine and Serve
- Add the cooked rice and sautéed paneer to the vegetable mixture. Stir well to combine. Sprinkle with grated cheese. Cook for 2-3 minutes, allowing the cheese to melt slightly. Serve hot.
