Instructions

  • Wash and finely chop the onion, tomato, and bell peppers.
  • Heat the olive oil in a large pan or skillet over medium heat.
  • Add the chopped onion and sauté until translucent, about 5-7 minutes. This softens the onion and releases its sweetness.
  • Add the chopped tomato and bell peppers to the pan. Cook until slightly softened, about 3-5 minutes.
  • Stir in the green peas and salt. Cover the pan and let the vegetables cook in their own moisture until tender, about 5-7 minutes.

  • While the vegetables are cooking, bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente, about 8-10 minutes. Be sure not to overcook the pasta, as it will continue to cook slightly when combined with the sauce.
  • Drain the cooked macaroni and rinse under cold water to stop the cooking process. Set aside.
  • Add the cooked macaroni to the pan with the vegetables. Stir in the tomato ketchup and garam masala. The garam masala adds a warm, aromatic depth of flavor.
  • Taste and adjust salt as needed. Sprinkle with freshly ground black pepper. Sauté for another minute or two to combine all the flavors.

Recipe Notes

Good To Know

  • For an extra layer of flavor, temper whole cumin seeds and a pinch of hing (asafoetida) in hot oil before sautéing your onions and tomatoes; this gives a distinct North Indian aroma that pairs beautifully with the pasta.
  • If you like your macaroni tangier, add a splash of tamarind pulp or a few drops of lemon juice just before serving.
  • To make this dish vegan, omit ghee (if used) and use oil instead. Consider adding pan-seared tofu cubes for extra protein and texture.
  • Leftovers can be turned into macaroni tikki: mash the pasta slightly, mix with a little besan (chickpea flour), shape into patties, and shallow fry.

Expert Tips

  • Adjust the spice level to your preference by adding more or less chili powder.
  • For a creamier macaroni, stir in a dollop of cream cheese or cashew cream just before serving.
  • Freshly chopped cilantro and a squeeze of lime juice make excellent garnishes.

Storage Instructions

  • Store leftover macaroni in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in a microwave or on the stovetop with a splash of water or milk to prevent sticking.
