Ingredients
Green Chilies
- 200 gm Chilies green
Spices
- 1 tbsp Mustard Seeds yellow
- 1 tbsp Nigella Seeds also known as kalaunji, onion seeds
- 1/2 tbsp Fenugreek Seeds methi, also known as methi dana
- 1 tbsp Turmeric Powder haldi
- 1 tbsp Carom Seeds ajwain
Oil and Seasoning
- 100 ml Mustard Oil
- 2 tsp Salt or to taste
Instructions
Prepare the Green Chilies
- Wash the green chilies thoroughly and pat them dry. Remove the stems and slit each chili lengthwise.
Grind the Spices
- In a spice grinder or mortar and pestle, coarsely grind the yellow mustard seeds, nigella seeds, fenugreek seeds, and carom seeds. Do not grind them into a fine powder.
Combine Ingredients
- In a clean, dry jar, combine the prepared green chilies, coarsely ground spices, turmeric powder, and salt. Mix well to ensure even distribution of spices.
Add Oil and Mix
- Pour the mustard oil over the chili mixture. Seal the jar tightly and shake vigorously until the chilies are completely coated with the oil and spice mixture.
Cure the Pickle
- Allow the pickle to cure at room temperature for 4 days, shaking the jar occasionally. After 4 days, you can store it in the refrigerator for longer preservation.
