  • Wash the green chilies thoroughly and pat them dry. Remove the stems and slit each chili lengthwise.

Grind the Spices

  • In a spice grinder or mortar and pestle, coarsely grind the yellow mustard seeds, nigella seeds, fenugreek seeds, and carom seeds. Do not grind them into a fine powder.

Combine Ingredients

  • In a clean, dry jar, combine the prepared green chilies, coarsely ground spices, turmeric powder, and salt. Mix well to ensure even distribution of spices.

Add Oil and Mix

  • Pour the mustard oil over the chili mixture. Seal the jar tightly and shake vigorously until the chilies are completely coated with the oil and spice mixture.

Cure the Pickle

  • Allow the pickle to cure at room temperature for 4 days, shaking the jar occasionally. After 4 days, you can store it in the refrigerator for longer preservation.
