Ingredients
For the Potatoes
- 1 kg Potato about 4-5 medium sized potatoes, boiled and peeled
For the Spicy Garlic Sauce
- 2 tbsp Vegetable Oil
- 5 Chili dried, red
- 4 clove Garlic finely chopped
- 1 tsp Peppercorns black, coarsely crushed; reserve some for garnish
- 1.5 tsp Salt or to taste
- 1 tsp Chili Paste lal mirch, fresh, red
- 1/2 tsp Soy Sauce
- 1 tbsp Lemon Juice
Instructions
Prepare the Potatoes
- Boil and peel the potatoes. Cut into bite-sized pieces.
Sauté Aromatics
- Heat vegetable oil in a wok or large pan over medium heat. Add dried red chilies and saute for a minute until fragrant.
- Add the finely chopped garlic and sauté until golden brown, about 2-3 minutes. Be careful not to burn the garlic.
Build the Flavor
- Add the crushed black peppercorns and salt. Stir well.
- Stir in the red chili paste and soy sauce. Cook for another minute.
Combine and Simmer
- Add the water and the boiled potatoes. Stir gently to combine. Cover and let simmer for approximately 3 minutes to allow the flavors to meld and the potatoes to absorb the sauce.
Finish and Garnish
- Stir in the lemon juice. Increase the heat to high and toss the potatoes vigorously to coat evenly and achieve a rich color.
