Ingredients
Macaroni & Vegetables
- 250 gm Macaroni cooked al dente, elbow macaroni
- 1 Eggplant cubed
- 10-12 Beans green, trimmed and cut into 1-inch pieces
- 1/2 Bell Peppers bell pepper, sliced
- 1/2 Zucchini sliced
Tom Yum & Aromatics
- 2 tbsp Tom Yum Paste
- 1 tsp Lemon Juice freshly squeezed
- 1 tsp Garlic Paste
- 2 stalks Lemongrass bruised
- 4-5 Kaffir Lime Leaves
Other Ingredients
- 2 tbsp Soybean Oil or other neutral oil
- 1 1/2 cup Water
- Salt to taste
Instructions
Prepare the Vegetables
- Cook macaroni according to package directions. While the macaroni cooks, prepare the vegetables. Roughly chop the eggplant, trim and cut green beans, slice capsicum, and slice zucchini.
Sauté Aromatics and Tom Yum Paste
- Heat soybean oil in a pan over medium heat. Add the garlic paste and Tom Yum paste. Sauté for 1 minute until fragrant.
Combine and Simmer
- Add the prepared vegetables, lemongrass, and kaffir lime leaves to the pan. Pour in the water and bring to a simmer. Cook for 5-7 minutes until vegetables are tender-crisp.
Finish and Serve
